Fruit Pizza

Fruit Pizza!  This is one of my favorite desserts of all time.  I remember being introduced to fruit pizza when I was probably around 7 or 8.  My friend's mom use to make them.  I absolutely loved going to her house and being surprised by the fruit pizza sitting on the stove, that her mom had just prepared.

One day while reminiscing, I thought of the fruit pizzas I use to eat at my friend's house when I lived in Alabama.  I got online and looked up the recipe.  I'm not sure if it is the recipe my friend's mom used, but it taste pretty close.

When summer arrives each year, you can betcha I'll be making a fruit pizza.  It is a perfect summer dessert.  I love to use peaches, strawberries, blueberries, mangoes, and pineapple.

Yesterday, we went to a 4th of July family cookout.  I brought dessert.  This year's fruit pizza was patriotic.  I tried my best to make a red, white and blue flag.  Not bad for my 1st attempt.

If you've never tried this delicious summer dessert, here's the recipe!

( I made a rather large one, enough for about 12 people.  You can half this recipe to serve a smaller group...)

Ingredients
 2 rolls of refrigerated sugar cookie dough
 2 blocks of cream cheese
 1 tsp of vanilla extract
 1/4 cup of powdered sugar
 fresh fruit (around 3 cups)

Directions
Take the refrigerated cookie dough and smush out onto a large baking pan.  Bake as directed on package.  (350 for 10 mins.)  After baking, let it cool COMPLETELY!





Combine 2 blocks of softened cream cheese and 1 tsp. of vanilla with a mixer.  Slowly add 1/4 cup of powdered sugar and mix well until you have a creamy mixture.



Put your cream cheese icing on cooled cookie crust  and smooth over to cover completely.





 Wash, drain, cut fruit.  Layer in rows, zigzag, however you like.  In my case, I used blueberries, strawberries, and some white icing with a star tip. (... because I wanted an American flag)  You can use as many types of fruit as you want and make any design you want.

  1. I must have been born yesterday cuz I've NEVER seen this before! And go figure, as soon as I read your post, within an hour someone posted their fruit pizza shaped exactly like an american flag on my twitter feed! haha funny how that works.

  3. Definitely looks yummy! I'm trying to avoid cookies and such. Losing weight is not the easiest for a girl with a sweet tooth. But, if I were around this, I would have to give in to the craving!

    1. I wouldn't want to mess up anyone's diet. I was just sitting here thinking of things that could be omitted/substituted to make it not so sugary.... I'm going to have to research that.

  4. Delish, Tara! I would've never had the idea to make this on my own. I love fruit, too, but hardly ever eat it. Kinda like having a mental block. Then when I take a bite of cantaloupe or some other fruit, I'm, like, "Why don't I eat this more often?" Maybe if I kept a fruit pizza in the refrigerator! Hope you're doing great, Amiga, and looking forward to catching up.

    Hey, on a different subject, did you know that next year's hygienists conference is coming to BOSTON???

    1. Amiga, I go through spurts like that too. LOL Trust me when I say, you'd be eating fruit all the time because fruit pizza is to die for! Although I'm sure the added sugar and fat from the cream cheese and cookie crust kind of defeats the being healthy and eating fruit.

      I had no idea the hygienist conference was coming to Boston. Too cool! I'll spread the word to the hygienist in our office!
